Diospyros kaki, commonly known as Japanese Persimmon, is a deciduous fruit tree native to East Asia. It is cultivated for its sweet, orange, tomato-shaped fruits that ripen in fall and can be eaten fresh or dried. The tree has glossy, ovate leaves that turn shades of yellow, orange, and red in autumn, adding ornamental appeal. Typically reaching 15–30 feet (4.5–9 meters) in height, it grows well in loamy, well-drained soils and prefers full sun. Japanese Persimmon is both a productive fruiting tree and an attractive landscape specimen. Suitable for USDA Hardiness Zones 7–10.

To germinate Diospyros kaki seeds, soak them in warm water for 24 hours, then cold stratify for 60–90 days. Place the seeds in a moist medium such as peat, seal in a plastic bag, and refrigerate at 34–41°F (1–5°C). After stratification, sow seeds about 1/2 inch (12 mm) deep in a well-draining soil mix and keep at a constant temperature of 70–80°F (21–27°C). Provide bright, indirect light and maintain even moisture. Germination can take 3–8 weeks. Transplant seedlings into larger containers as they grow, and move them outdoors once well-established.
